mini bundt cakes

Need an easy recipe for a ladies luncheon or tea party with a pretty presentation?  From start to finish, this will take about 30 minutes–perfect for beginners like me.  Using this Nordic Ware Mini Bundt pan, you can create miniature tea cakes in detailed shapes including: elegant heart, chrysanthemum, sunflower, rose, cathedral, bavaria, fleur de lis, star, tri star and the original bundt (and serve on your favorite antique cake stand). There are 30 mini Bundt shapes all together.  Nonstick cast aluminum allows for easy clean up.  You can find this pan in specialty baking supply stores (i.e. Sur la Table) or even online at Amazon.com.  Alternatively, you can use a single bundt cake pan.

Applesauce Spice Tea Cake Recipe

Ingredients:

  • 1x 18.25 oz package yellow cake mix
  • 1x 3.4 oz package instant vanilla or butterscotch pudding mix
  • 1 cup applesauce
  • 1/3 cup vegetable oil
  • 1/2 cup water
  • 4 eggs
  • 1/8 tsp ground ginger
  • 1/4 tsp ground all spice
  • 1 tsp ground nutmeg
  • non stick spray for baking (with flour)
  • Granulated white sugar (or powdered sugar)

Instructions:

Preheat oven to 325F.  Spray mini Bundt cake pan with spray (flour). In a large mixing bowl, mix all ingredients on medium speed for 2 min. Spoon into prepared pan until 1/2-2/3 full (do not overfill).  Bake for 18-22 min or until toothpick inserted into cake comes out clean.  Cool for 10 min/ sprinkle with granulated or powdered sugar. Serve on your favorite cake stand.
